What the ritual is

Pind Daan is the offering made at Gaya for three generations of ancestors. It runs about 4 hrs with one pandit, and is kept at the temple.

The vidhi is fixed by tradition and the pandit follows it in order; what varies between families is custom — which deity is honoured first, whether a particular prasad is made, how much of the katha is read aloud. Tell the pandit what your family has always done and he will make room for it where the vidhi allows.
